Re: Clemenza's sauce from "The Godfather" - the pinch of sugar is VERY important. It takes away the acid bite of the tomato paste. You also can let the bottom of the sauce burn just a little bit, then scrape it off and mix in with the rest of the sauce. Just a little burn, though -
Now I'm hungry...
